A few months ago, my parents came back from a trip to The Cayman Islands (I know, I’m jealous, too). When they came back, we were excited to hear about the sun and sand — which were obviouslyamazing. We were also surprised when they couldn’t stop talking about a pizza they hadwhile there. It was a breakfast pizza and ever since they started talking about it, we’ve been trying to replicate it in our own kitchen.

To make breakfast pizza, instead of marinarasauce, we brushpizza dough with olive oil and then season with salt, pepper and lemon zest. Next comes sliced tomatoes, crumbled goat cheese, fresh basil and three eggs. Slide the pizza into the oven and bake for about 10minutes.

I probably don’t need to say this but, you can add so many toppings to this pizza — cooked bacon, sausage, veggies, anything!

Breakfast Pizza Recipe with Tomatoes and Eggs

Add your favorite breakfast meats or vegetables to this pizza. Crumbled cooked bacon or sausage areexcellent.

Makes 4 servings

You Will Need

12 ounces store-bought pizza dough

1 tablespoon olive oil plus more for serving

1 garlic clove, minced

1 teaspoon lemon zest

3/4 cup sliced plum tomatoes

3 ounces crumbled goat cheese

1/2 cup fresh basil leaves, chopped

3 large eggs

Salt and fresh ground black pepper

Directions

    1Remove the pizza dough from the refrigerator and set aside for about 20 minutes. Place a pizza stone in the oven and heat the oven to 500 degrees F.

    2On a lightly floured countertop, pat the dough into a disc with your fingertips, then shape it into a 12-inch circle. Dust the surface of a pizza peel or large inverted sheet pan with flour and place the shaped dough on it.

    3Brush pizza with olive oil then sprinkle the dough with garlic, lemon zest, and season with salt and pepper. Arrange tomatoes, goat cheese and half of the basil over dough. Crack 3 eggs over the top and season with salt and pepper.

    4Shake the pizza peel or baking sheet slightly to make sure the dough is not sticking. Carefully lift any areas that are and sprinkle a bit more flour underneath, then slide the pizza directly onto the preheated baking stone. Bake for 6to 10 minutes.When the crust is golden, the cheese is melted and the egg whites are cooked, transfer the pizza to a cutting board.

    5Scatter remaining basil on top and drizzle with a small amount of olive oil. Cut into slices and serve.

Adam and Joanne's Tips

  • If you do not own a pizza stone, heat the oven to 500 degrees F. Then assemble the pizza on a pizza baking pan with holes, this will help with a crispier crust.

    Thanks fir the tip on not having a pizza stone by the way where can you find one? Oh Joann or Adam can you suggest a good home made pizza dough?

      Hi Sandy, I’d look online or in a kitchen store (like Williams and Sonoma).

    Hi,
    When I have made breakfast pizza, I slice up boiled potatoes from the night before and scramble eggs to put on the pizza. Served it with taco sauce.

    Absolutely gorgeous!
    We prefer savory things for breakfast and I came across this recipe when looking for something new to try. My husband loved it and has been having this for breakfast for the past 3 days!
