I have never held a brunch in my home. When I was invited by Eggland’s Best to check out their delicious brunch recipes, I was inspired! My family didn’t get together for Easter over Easter weekend, so we got together this past weekend for a brunch. We all had fun checking out new brunch recipes on the Eggland’s Best website and with their FREE e-cookbook. When my family gets together, there is always PLENTY of food! Check out our brunch spread!

Everything was delicious and all made with Eggland’s Best eggs. The Egg in Tortilla Hole recipe is basically a fried egg in the center of a hole made in a tortilla. Topped with fresh avocado, cheese, salsa, and sour cream. It is a fun way to enjoy your eggs with Mexican flair.

Meaty Stuffed French Loaf Recipe
The Meaty Stuffed French Loaf recipe is a hearty brunch recipe to satisfy any hunger. It combines Italian sausage, ground beef, onions, and seasonings with fresh French bread. It makes 24 individual servings that are easy to portion off smaller for kids or grab two for big appetites.

Spinach & Bacon Squares Recipe
The Spinach & Bacon Squares recipe is a must-have at any brunch. It was by-far the most-liked brunch recipe we had. My daughter and son both asked if I could make it again because it was so good. I agreed! It combines bacon, onion, eggs, cheese, and 2 big bags of spinach. I used yellow cheddar but it calls for white cheddar. I’m sure it would even be delicious with Swiss!

French Toast Cupcake Recipe
My sister made the French Toast Cupcake recipe from Eggland’s Best website. They are convenient portion controlled (and mess controlled) portions of French toast in a cupcake wrapper. I like that they can be made ahead of time too for a quick breakfast or snack anytime. They were both kid and adult-approved!
Babka Easter Bread Recipe
My husband’s family Babka Easter Bread Recipe is a must-have at any Easter gathering! It contains a lot of egg yokes, plenty of butter, sugar, raisins, and takes all day to make. It is amazing and worth every minute and calorie!

Cinnamon Rolls Recipe
I made Cinnamon Rolls for the first time ever too. It took a while too since it is a home-made bread item but so very well worth it. They are very easy to make, I plan to make them again soon.

Pecan Pie Recipe
I also made a Pecan Pie. It was also great for a brunch dessert recipe. It was so easy to make and not super-super sweet like some pecan pies.
