    Mixed Vegetable Chutney

    After my carrot chutney recipe, i got confidence to try out most wanted recipe which is made with vegetables. I always dreamy of this recipe for a very long time. I wanted to include some kind of vegetables in the chutney so it will make it more tasty and healthy. So i made it and it didn't even taste that it had vegetables in it. It was so yummy. So try this and let me know how it turned out.

    Ingredients for Mixed Vegetable Chutney

    • Oil - 1 tsp
    • Onion - 1 small chopped
    • Green Chilli - 4 to 5
    • Ginger - 1 inch piece chopped
    • Garlic - 5 cloves
    • Turmeric Powder / Manjal Podi - 1 tsp
    • Tomato - 1 large chopped
    • Carrot - 1 medium size chopped
    • Beans - 10 chopped
    • Cauliflower - 1 cup chopped
    • Fresh Coriander Leaves - ½ cup
    • Tamarind Pulp - 2 tbsp
    • Salt to taste
    • Sugar - 1 tsp

    For Tempering:

    • Oil - 2 tblspn
    • Mustard Seeds / Kaduku - 1 tsp
    • Urad Dal / Ulundu Paruppu - 1 tsp
    • Cumin Seeds / Jeerakam - 1 tsp
    • Asafoetida / Hing / Kaya Podi - ¼ tsp
    • Dry Red Chilli - 1

    How to Make Mixed Vegetable Chutney

    1. Take carrot, cauliflower, beans in a microwave safe bowl, add around ½ cup of water and cook it covered for 5 mins.
    2. Heat oil in a kadai. Add in onions, ginger, garlic, green chilli in it and saute for a min.
    3. Add in turmeric powder and saute for 30 sec.
    4. Add in tomatoes and saute for couple of mins.
    5. Now add in the cooked vegetables along with the water and mix well.Add in sugar and mix well.
    6. Increase the heat and cook for a good 10 mins or so.
    7. This will evaporate the water and makes the vegetables get more flavor and loses its raw taste.
    8. Allow this to cool a bit, take the vegetables in a mixer and add coriander leaves, tamarind, salt. Now puree this.
    9. You can make it little chunky or do it very smooth.
    10. Transfer the chutney to a bowl.
    11. Now make tempering by heating oil and crackling mustard, urad dal, cumin, dry chilli and asafoetida.
    12. Once it is crackled pour it over the chutney and mix well.
    13. Serve with dosa.

    Ingredients

    • 1 tsp Oil
    • 1 small chopped Onion
    • 4 to 5 Green Chilli
    • 1 inch piece chopped Ginger
    • 5 cloves Garlic
    • 1 tsp Turmeric Powder / Manjal Podi
    • 1 large chopped Tomato
    • 1 medium size chopped Carrot
    • 10 chopped Beans
    • 1 cup chopped Cauliflower
    • ½ cup Fresh Coriander Leaves
    • 2 tbsp Tamarind Pulp
    • Salt to taste
    • 1 tsp Sugar
    • For Tempering:
    • 2 tbsp Oil
    • 1 tsp Mustard Seeds / Kaduku
    • 1 tsp Urad Dal / Ulundu Paruppu
    • 1 tsp Cumin Seeds / Jeerakam
    • ¼ tsp Asafoetida / Hing / Kaya Podi

      Wow, I've never made chutney with so many vegetables at once (only carrots). I had some leftover beans and cauliflower, so I tried it yesterday and it was great, better than I thought. We had it with chicken fry and chapatis. My husband described it as "awesome comfort food".
