It's not hard to treat your mother well. Think of all the meals that you have been fed over the years from 'mom'.

It boggles my mind how time-consuming meals are.

Figure out how many meals there are to prepare in a week then balance it with everyone's likes and dislikes. It's a lot of work. If I could only repay her.

Besides the pleasant tasks of being warm, thoughtful, and loving to your mom you can also extend your happiness by making her a wonderful easy chocolate dessert.

Mother's Chocolate Strudel can be served any time but on a special day such as her birthday orMother's Day would be supernice. Don't forget dad either.

💭 Baker's tip

Mother's Chocolate Strudel Recipe - Vegan in the Freezer (1)

There are only 4 ingredients and it comes together in about 15 minutes. All ingredients are vegan and that may be a surprise to you.

Try to roll a little bit snug as the pastrydoes puff up and it may rise way above your inside ingredients.

That is still okay, but it looks really good when everything is all snug and ooey and gooey.

I'm trying to think of any hints to make this recipe run very smoothly for you but it is so easy and foolproof that I can't think of anything else.

Try Mother's Chocolate Strudelsoon for your special lady and, believe me, she will love itand needless to say, everyoneelse will too.

I like a 10" knife blade for chopping nuts. They seem to move all over the cutting board and you can just rock back and forth all over the board to catch the nuts.

Speaking of cutting boards. A nice large bamboo one is perfect.

Another bamboo product that works great is a tapered rolling pin. You should have one of these on hand.

Stainless Steel baking pans are the way to go. Heftier and easier to clean.

Bonus: This isn't the only strudel you enjoy quickly and happily. How about an Apple Strudel for a change. Check it out!

  • Place the seam side down on an ungreased baking sheet. Fold the end under a little bit.

  • Let cool on a wire rack.
  • If you like - sprinkle lightly with powdered sugar

  9. Henko

This looks great! I have a question what kind of puff pastry did you use because all the puff pastry I have seen is not vegan.

  10. Ginny McMeans

Pepperidge Farms is vegan - believe it or not. There is a healthier version too and it is called Aussie Bakery Vegan Puff Pastry . I have seen it at Whole Foods. There are actually others too.

  11. Ginny McMeans

    Thanks Kim!

  18. Andrea

When you say cut along the top, do you mean cut all the way through?

  19. Ginny McMeans

I made it clearer in the directions Andrea. I mean to slice slits in the top layer for decoration.

  20. kdmi

Hi -- Just looked up the ingredients list for Pepperidge Farm Puff Pastry Sheets and it includes nonfat milk. I'm not aware of any other version from Pepperidge Farm...is there something other than the one in stores with nonfat milk?

  21. Ginny McMeans

No non fat milk. Your research must have jumped you to another product by PF. I can't post a photo in comments (I have the ingredients in a photo) but no milk whatsoever.

  22. Justina

Can this be frozen? If so, how long does it need to thaw before baking? Thaw in the fridge or on the counter? Thanks!

  23. Ginny McMeans

Yes, it can be frozen Justina. Bake it first and then freeze. Thaw in the refrigerator and set out, when thawed, to get to room temperature about an hour before serving.

  24. Justina

Thanks, Ginny. I would have thought that you make it, freeze it, and bake it later! It seems that it is equally good at room temperature as it is hot out of the oven? Or perhaps you cool it for longer than I realized?

  25. Ginny McMeans

Yes, it is great at room temperature. You can certainly experiment with freezing it first, before baking, but I have not done that yet. I am wary to tell you to do it for sure. 🙂

  26. Mazie

Made this today and used mini chocolate chips and walnuts. Delicious! Cut it really this like a cookie because it is rich! Than you!

  27. Ginny McMeans

Sounds great and you are so welcome!

  33. Kim

I’m wondering if something like Nutella would be good in place of the chocolate?

  34. Ginny McMeans

Yes, it would be great Kim but Nutella is not vegan. If you'd like to make you're own I have a recipe on the blog for Nutella too. It is so delicious and from scratch. https://veganinthefreezer.com/homemade-nutella/

  35. Jo

Surely you cannot use butter if vegan?

  36. Ginny McMeans

Dairy-free butter means that it is vegan Jo.

  37. Darcie

I’m not vegan and was wondering if regular butter could be used.

  38. Ginny McMeans

    Yes, it can Darcie.

Came out perfect even though I forgot to cut slits in the top
Please let us know best way to store overnight.
Thanks for this delicious, easy recipe!

  41. Ginny McMeans

That's great Johanna. It should keep fine in a tight fitting container inside the fridge overnight.

  42. Kathy

Why dairy free butter? Is there an alternative?

  43. Ligia Lugo

Dairy-free butter if you're making it vegan. If you aren't, you can use a normal butter.
